When I came up with the seasoning, I had no idea how versatile this seasoning was going to be.  I thought it would only be good on beef and pork and used on the grill.  It was after years of giving Todd's DIRT out to family and friends that they showed me the endless ways to use DIRT.  What really surprised me was how many kids love my seasoning.  I actually have kids that have bought bottles from me, so their parents will use my product.   Try it on popcorn, yes I said popcorn.  You will love it.

The more you use THE ORIGINAL Todd's DIRT, you will realize that you will want nothing else on your food.  Put my seasoning in any recipe that would use salt and pepper.  Try mixing it in with your favorite marinade.  The seasoning is great in many different kinds of cuisine.  Great in Italian, Mexican, Caribbean foods, etc

Todd's DIRT  is about three things.  Cooking should be easy, fun and great tasting.  As you can see with these recipes on this page cooking with my seasoning is very easy in make great tasting food.  When you come home from a busy day, and do not have a lot of time to make something,  don't order out, just grab some kind of meat or seafood and sprinkle Todd's DIRT  seasonings on it.  It is that easy.  Also try these simple recipes.  No reason why you can't have great tasting food without much effort.

The BAYOU DIRT Seasoning

 I have created my own Creole blend and mixed it in with the THE ORIGINAL Todd's DIRT. It is a gourmet seasoning that has 16 spices with NO MSG and is GLUTEN FREE, just 100% natural seasonings.  The first thing you notice is the great creole/cajun style taste.  The second thing it does not have the salty lingering effects that you get after tasting similar seasonings.  It is lower in sodium and I only use Kosher salt, not ionized salt like the others on the market. Thirdly the very nice spicey burn that lingers in your mouth.

Dirty Wings:         By Dirty Boy Tom in Severna Park, MD
Chicken Wings (any amount)
Olive oil
Original Todd's DIRT  (to taste; I suggest to Dirty them up real good.), CRABBY DIRT orThe BAYOU DIRT   .

Turn the oven onto broil. Brush olive oil on wings. Sprinkle Original Todd's DIRT   on both sides of the wings. Cook in oven for 30 minutes, turning wings once.
Hint: Yes, I know this seems too easy, but cooking with the Original  Todd's DIRT  is always easy.

 
Dirty Little Dip         By The Dirt Man's Wife Holly

8 ounces sour cream
4 ounces cream cheese                                                                 2 teaspoons Original Todd's DIRT  (To taste)
1 package (4.4 ounces) water crackers

Use softened cream cheese to ease mixing.  Mix sour cream, cream cheese and Original Todd's DIRT  together.  Spread dip over crackers and serve.  Can use Pretzel sticks instead of crackers.  CRABBY DIRT also works in place of Original Todd's DIRT  

Why buy pre-packaged dips when this is so easy. We use this dip at all of our shows and everyone always wants the recipe.  It is funny.  People at shows actually buy either kind of DIRT, just to make the dip. I have had customers see me months later and tell me they did not know they could cook with the seasonings. 

HintThis dip works well with veggy trays, try it you will love it.  If you do not have cream cheese, use just the sour cream.  Works really well on baked potatoes and on chips.

Steak A La Dirt Man         By The Dirt Man

Rib Eye, Porter House or your favorite steak
One Large Onion
2 Large Portabello Mushrooms
3 tablespoons of Olive Oil
One tablespoon of butter
3 tablespoon of Balsamic Vinegar
Original Todd's DIRT  (to taste; I suggest to Dirty them up real good.)      

Turn the grill on high or get the coals hot.   Cover the meat on both sides with Original Todd's DIRT Place the meat in the refridgerator for a half an hour or so.  Slice the onion and the mushrooms into strips. In a sealable bag put the mushrooms in with the Balsamic Vinegar, and shake well.  Let them sit for a half an hour.   In a saucepan put the olive oil and butter and let the butter melt over medium heat.  Put the onions and dump the bag of mushrooms with the Balsamic Vinegar into the pan.  Add about two tablespoons of Original Todd's DIRT  into the pan and mix Let it cook down until onions are clear. Stir often.  When contents in the pan is half way cooked, put the steak on the grill.  When the steak is done the way you like it, plate it and put the mixture of onions and mushrooms on top of the steak. Remember to always let your meat sit for a couple of minutes after taking off the grill.  Your taste buds are going to go into overtime with this recipe.

Hint: You can useThe BAYOU DIRT  instead of the Original Todd's DIRT , to spice this steak up.  I have to to warn you that this steak is going to blow your mind.  This is the what the DIRTMAN's  does.  It's my job!!!!  If you do not like mushroom's, try red or green peppers.  It is all Goooooood, when you get DIRT Y.

Philly Cheese Steak Crepes         By Dirty Michael Beaulieu

1 Hanger Steak
4 or 5 mushrooms
1 Yellow onion
1 or two green peppers
1 can of Cream of Mushroom soup
1/4 cup of milk and quarter stick of Butter (approx)

2 to 3 teaspoons of Original Todd's DIRT 

Crepes

3 eggs
1/4 tsp salt
1 cup milk
3/4 cup flour
3TBS butter

Starting with the Crepes mix all the ingredients together t'ill smooth.  Spoon mixture on the pan to desire size.  Cook in frying pan at high heat this will cook fast so keep an eye on it.  Place on plate and refrigerate. 
Take the hanger steak and well seasoned with Original Todd's DIRT .  Heat your grill to High.  Sear meat at high heat to lock in those juices and then cook to a medium to medium well. DO NOT OVER COOK THE MEAT please!! / Then let it rest on a cutting board.
In another pan with lots of butter good sprinkle of Original Todd's DIRT  and cook the mushrooms,onions,green peppers and when tender add 1 can of cream of mushroom and about 1/4 cup of milk and stir t'ill smooth and vegies are well covered.turn off heat!!

now that the meat has had time to rest take electric knife and cut the hanger against the grain for more tender cuts and slice as thin as you can the whole thing.  Then add to your pan of veggies and mushroom cream mix and stir it around so the meat all gets covered with the sauce you made.  Take out the crepes and start building!! start with one crepe in a dish and spoon in some of that great mixture then top with cheese of choice.i used mozzarella.close the crepe and top with cheese again.  Put it in a cooking pan.  Bake in preheated  oven at 325 degrees for about 20 to 25 minutes or until golden brown!   Let set to cool off a bit and then enjoy!!!
 

Hint: You can useThe BAYOU DIRT  instead of the Original Todd's DIRT , to spice this steak up.   This is sooooo good.

Dirty Olive Oil:         By The Dirt Man

One Bottle of Extra Virgin Olive oil
8 teaspoons of Original Todd's DIRT  

Using a funnel put the Original Todd's DIRT  in the olive oil.  Shake really well.  Use this olive oil for all your cooking.  I use it all time with sauteing or grilling.


Hint: Always shake up the bottle really well before using.  You will be surpised how good this is.  I would still use Original Todd's DIRT  as you normally would.  Just not as much.  Can also use CRABBY DIRT.  Add a little more DIRT to taste for a dipping sauce.

 
Dirty Salad Dressing:   By Kerry Dunnington, Food Columnist, Recipe Developer, Cook Book Author, Maryland

2 teaspoons Original Todd's DIRT  
2 teaspoon Dijon Mustard
1/2 cup Rice Vinegar
1 cup of Olive Oil

In a two cup capacity jar with a tight fitting lid, combine Todd's DIRT , Dijon mustard and vinegar.  Shake Well.  Add olive oil.  Just before using, shake dressing well.  Yields about 1 1/2 cups.

Try it on a salad, cold pasta for a great tasting pasta salad.  Toss it with shredded cabbage for a refreshing take on cole slaw.

Dirty Hamburgers:  By "The Dirt Man"
2 pounds ground beef or ground chuck (I prefer)
½ cup Italian bread crumbs
1 egg
3 tablespoons Original Todd's DIRT  (to taste)

Combine all ingredients and make into patties. Cook on grill until middle of burger is done. Add additional Original Todd's DIRT  while cooking.
Hint: Sound too easy? Well it is. However, the taste can't be beat. You can't add too much Original Todd's DIRT  to this recipe. I guarantee that after you taste this burger, you will continue to add more Original Todd's DIRT  when you make this again. Original Todd's DIRT  can be added to your favorite hamburger recipe or to a frozen patty and will instantly make it a crowd pleaser. You can useThe BAYOU DIRT  instead of the Original Todd's DIRT , to spice up the burgers.  This is how the DIRT Man likes it.

 
Dirty Fried Chicken:
1 tablespoon butter or margarine
1 cup Bisquick mix
1 teaspoon paprika
4 pounds cut-up chicken drumsticks, thighs, and breasts
2 tablespoons Original Todd's DIRT

Preheat oven to 425 degrees. Melt butter in bottom of cookie sheet. Stir Bisquick mix, paprika and Original  Todd's DIRT . Coat chicken with mixture. Place skin-side down in dish. Bake 35 minutes, then turn chicken. Bake an additional 15 minutes longer.

Hint: this recipe is a little different then regular fried chicken.  You can use The BAYOU DIRT  to spice it up.   Additional Original Todd's DIRT  can be added to the chicken after it has finished cooking. I just want to roll around in this batter. It is Dirtlishious.  A quick easy way to make Fried Chicken.  You can also put Original Todd's DIRT or The BAYOU DIRT  in your favorite Fried Chicken recipe. By the way The Dirt Man's favorite food is Fried Chicken.  Especially good ole southern Fried Chicken.  I might live in Yankee country but I am a Southerner at heart, I mean belly. 

 
Dirty Roast
Any kind of roast
2 medium onions, diced into large slices
½ cup carrots
6 potatoes, cut in half
1 cup water
2 tablespoon Original Todd's DIRT   rub all over roast or (to taste, though, as I always say Dirty it up!)
Crock pot

Put water in bottom of crock pot. Add onions and potatoes. Season outside of roast with Original Todd's DIRT . Add roast to crock pot. Add carrots last. Cook on low all day for a moist falling apart roast.
 
Hint: Make gravy with the juices. Add additional Original  Todd's DIRT  once the roast is served.
 
 
Dirty Apple Roasted Chicken  by Dirty Boy John in Laurel MD

1 whole Frying Chicken
1 12oz can (soda or beer)
1 Cinnamon sticks and one tablespoon of honey (if you like it sweet)
10 oz of Apple Juice
Shake Original Todd's DIRT   (Thick and Heavy)


Preheat oven to 350 degrees.  Clean the whole chicken real good. Dry off the chicken well inside and out.  Season outside of chicken and under the skin with Original Todd's DIRT.  Also put DIRT  in both cavities.  Drain the liquid out of the can.  Cut the top off the can and add the apple juice.  Place the cinnamon stick and or the honey in the can and mix with the apple juice.  Place the whole chicken legs down over the can and put it on a baking sheet.  Put the chicken in the oven for one hour and fifteen minutes.  After done cooking let the chicken rest for fifteen minutes.   

Hint: Put Original Todd's DIRT   on thick and heavy.  DIRTY  it up like the DIRT Man says.  You will get hooked on this chicken.  Your lips will be smacking.  Recipe would also work well on a grill.  Use indirect heat.


 
Dirty Grilled Onions:  By "The Dirt Man"
2 large onions
2 tablespoons olive oil
2 tablespoon butter
1 to 2 tablespoons Original Todd's DIRT (to taste)

Slice onions. Combine olive oil, butter, and onions in a sauce pan. Cover onions with Original Todd's DIRT. Saute` onions on medium low heat on stove top or on the grill. Cook until tender (brown color).

Hint: Okay, I added this because this is one of my favorites to put on hamburgers, steak, chicken and pork chops. You will always put this on your steak or hamburger after trying these onions.  They are DIRTlisious.  I also like to drain the liquid from the onions and pour it over the steak or pork chops, at the tail end of cooking.  This is a DIRT Man little grilling secret.


Dirty Desserts:

Okay, it can't be good on everything. However, if you find a dessert that works with Todd's DIRT, we would love to have that recipe. It has been tried with Jell-o by one of Todd's DIRT  lovers (DIRTY girl Katie, 12 years old), but that may be an acquired taste.
